Last year I worked on an ecotourism development project in Kenya (Mbirikani village)and I thought some of our documents might be of use for you as well.
What we understood was the most important to do at the begining is to define the type of tourism you want to follow - be it tourism, ecotourism, sustainable tourism etc... so I'm attaching a document describing some of the tourism definitions.
Try to contact Mark van Opstal, the facilitator of Mbirikani, maybe he could be of help as well.
